As far as your diet... Do what you like. Its your body. However I have not met a single person who has a clue about metabolism (and I have a Masters in Biology so I am not clueless here) that thinks what you are doing is safe or sane...unless of course you are tryingto sell books.
I am not a nutritionist. I am an immunologist. Master's degreed as well. 15 years in biotech research including metabolic disorders. I know a thing or two about biology and metabolism. I am not trying to sell any books. This was just a personal anecdote about seemingly having a greater ability to ride despite having a major medical setback. the only other difference was my diet change.
Previous couch potato status - 6.5 mile ride at 8mph average, had to stop midway up most hills on this ride, seriously out of breath. Felt like crap. Typical out of shape first rides....
Fit(prior to diet and leg break) - same 6.5 mile ride 12.4 mph average, never need to stop. felt very good. Capable of much longer rides. Could do the MS 150.
1 year after leg break(bedridden 2.5 months, took another 4 months to walk again, no exercise since June 1st 2009) 5 months on diet - 6.5 mile ride 11.2 mph, not out of breath at any point, felt pretty good, did not need to stop or walk at any point.
After just two weeks of riding I did a 17 mile(11.3mph) ride this saturday and a 25 mile ride(11.6 mph) this sunday. sorry, but I don't know anyone who can be 70lbs overweight and out of shape go from couch to 25 miles in two weeks and feel perfectly fine. I(my own internal control group) could not have done that exact thing two years ago.
If you feel eating this is insane, please specify why? Just calling it insane because unamed people "not clueless" might say so, is not backing up your claims with any data or scientific rationale. If you have a master's in Biology you should be capable of providing me with a scientific rationale as to why this is crazy.
