Plain water doesn't have much, if any effect under a grip. If it did, you people wouldn't have to mix it with soap to get it to help during installation. Mix a little dried soap or WD-40 with some rain water/sweat/condensation that somehow gets under the grip and you get a slippery mess.
I use plain water to install grips... Haven't had any issues with it, and it's really quite easy. But, yes, I do poke holes in the end of the grip to relieve pressure caused from both ends of the bar being sealed creating compression from the reduction of volume once the grip is all the way on. Water may take longer to set, but it's hassle free, with no mess. Hair spray is the way to go if you want it to stick forever. Just be careful, it can be difficult to remove in the future if done correctly. And as far as it not staying.. Mountain bikers use this method all the time.. As well as motorcyclists (the grip not slipping is kind of important).
