I agree that adjustment should be checked: it's much more likely that the store would mess up final assembly than that a Fisher would come with really poor brakes,

Buying copy of Zinn On Mountain Bikes would be a good idea; even if the OP doesn't want to tune the brakes himself - and he should tune them imo - then he'd understand what the LBS does better, allowing him to insist on a better job when appropriate.
