Really the length and the star nut's set depth is irrelevant for my inquiry, I am just looking for the thread size and pitch of the top cap bolt so that when I do go the the hardware shop I don't have to take the whole fork in and strip the threads trying 15 different bolts.

Well I know you want to do what you want to do, but you don't need to "fill the tube full of star nuts". Just bang out the one currently inside there and set a new one at the correct depth. It's probably cheaper and easier than driving to the hardware store to go bolt hunting. Hell, my LBS did it for me on one of my builds for free, saying it wasn't even worth a six pack.
