I have a pair of those SH-R215's, and really like them, light stiff and very comfy, what else do you need.
I also have a pair of SH-R131's which are quite nice but I prefer the 215's, they are a lttle lighter and sleeker, the 131's seem to have a more
toe space it you need it.
I have some sh-m300 for the MTB and can't fault them at all either, and I didn't even have them thermo formed on my feet,
they fit perfectly with out it.
I bought my first Shimano MTB shoes 20 years ago and just replaced them 3 years ago (more for looking ratty than for falling apart),
I don't think you can go wrong with shimano shoes.
