I'm willing to guess you can probably get yourself down between 200-220. When you were 400+ a goal of 240 probably seemed outrageous to an extent, now it's almost a reality.
I understand what you're saying. When I was 425, I simply wanted to see the '4' go away and never come back. Most people on these forums are aware that you can be big and still be an active and healthy person. I wanted to spend more energy getting healthy, as opposed to focusing on a number. I'm not sure what route to take with the weight loss goal for 2011. I honestly didn't expect to have come this far by now. I may actually ask my doctor to do a body fat analysis and suggest a target to shoot for. I'm just afraid of getting too hung up on being a specific weight. Body composition is a much more important factor. (I know someone else mentioned that earlier.)

You have a great story to tell that people can relate to and there is a distinct value in that, it's just up to you to figure out how to make $ off of it. You seem to be personable and as I tell anyone looking to get into personal training the business is 80% personal 20% training and it's especially true when dealing with the morbidly obese. You don't need to know 500 different exercises to train someone effectively, you have to be able to motivate and get them off their butt and give them tools to start the process.
The thought has occurred to me. I enjoy helping others. One of my side jobs that I continue to this day is teaching (marching band, etc.) It has it's rewards. Knowing as many big friends as I do, I'd love to be able to have them feel as great as I do. I know there is training and certifications required for personal training. Maybe you have some insight or suggestions in that area? Send me a PM!
