As others have said, the correct method is what works for you. In my case, I am a big stoker (200 lb), my captain is 130 lb. We pedal 90 degrees OOP. We start with the captain being cleated in while I have one foot on the ground. When she goes I clip in at the first (or second) opportunity. I always start with both hands as close to the center of my bars as possible in order to give the captain as much control as I can.
