OP - Will you be running this bike fixed or free? Bunny hops are kinda hard to do fixed. I've been doing mild stair drops and such on a cromo bike (Moto Messenger) with 32 spoke wheels and Fyxation tires, which are rated as 700 x 28c but are closer to 32mm. I'm running this bike fixed with low 46 x 20 gearing. I weigh under 140 lbs. I use this bike for urban travel for trips under 5 miles and it is not a commute bike, since it lacks fenders, which are prerequisites IMO for a commute bike.
