My bikes white/grey/black. It might be easier to see the dirt on the white parts from a distance...but it's not really that big of a deal or that big of a difference compared to the rest of the bike, when it's dirty it's dirty. I highly doubt it does anything for safety, it's not reflective. Aesthetically that's of course up to you, white goes with everything well, makes matching gear and accessories easy...I don't personally care about having matching stuff but just something to think about.
