+1 to laying off the protein and giving yourself more time to digest.
Suggestions for alternate food: Oatmeal, normal cereal (NOT the sugar-coated sugar that is marketed to kids), toast or bagels with peanut butter and/or jelly. My own preferences are instant oatmeal (two packs; one flavored, one plain), Grape Nuts, or Shredded Wheat.
That omelet with veggies and pan-fried potatoes would be awesome
after the ride.
