I would check into a set of RynoLites or Mavics. It sounds like the rims you picked up are made for a Hybrid type frame. It is probably a very serviceable rim, and might work best with commuter tires.

If you want some 2.1 or bigger tires, get some rims that were made with that width in mind. Out of round wobbly rims make for a raggedie biking experience. No one wants that.
