I think having multiple bikes is good (obviously) and I'm a definite proponent of having bikes for different purposes. Some of this depends on how you ride, where you live, what paths are available..etc. I rely on my bikes for transportation, so I'd need at least two for when one has an issue. The Paramount is a beauty, and it's going to cost you a pretty penny to replace it if you decide you want another road bike some day...make sure you are ok with letting it go before making a mistake.
I don't ride my Merckx a whole lot because of how unique and special it is...but it makes it even more fun the few times I do ride it. Even though it's not my favorite ride, and it's the ride I use least, it will probably always be in my stable. If it ever leaves the stable, I'd have to know the buyer personally.

That said, if you feel the fit is marginal, get rid of it and go for a better fitting C&V ride.
If anything it looks like it could be jacked up a touch more. I wonder if his seat post was just cut too far for his usage? Frame looks like a 52cm or so.
