For Shimano, sure. All the rear derailleurs use the same cable pull, except for really old Dura-Ace and 2010+ MTB stuff.
I'm using 7700 rear derailleurs with 7800 shifters.

No. Sram shifters dont' work with Shimano rear derailleurs and vice versa. Sram uses a different rear cable pull than Shimano. The front derailleurs are compatible (except for the newest Shimano 7900 ones).
