The biggest drawback is that it'll break sooner. You'll just end up buying 3 sora shifters rather than 1 ultegra (i'm just making up numbers, I don't know the real life-spans, but someone on here had numbers at one time).
Sora is 9-speed now... my Sora group is a couple years old and only 8-speed. After 2+ years of dogging the heck out of this bike, my [original, never replaced] Sora shifters are still working just fine; though they look like they've been to Hell and back.
