It will get better. Our first few months with our baby were pretty rough, too. We read all the books and listened to all the warnings from family members, but we were still completely unprepared. To be honest, it sounds like riding is out of the question for you right now (at least for the next few weeks or months). But you and your wife still need some outlet for your stress. Walks are what worked for my wife and I. We used to spend hours walking up and down the residential streets in our neighborhood. It calmed our baby down, made us feel a little less hectic, and gave my wife and I time to talk. A trainer might be helpful for getting a little riding in, but I found that getting out of the house was much more important to my sanity because, after weeks of being couped up with a newborn, the house began to feel like the center of all our stress and frustration.
My son also had problems with gas. Our doctor recommended the "Bicycle Legs" method on this website:

It worked great for him.
