1) Shimano and SRAM cassettes use the same cog spacing. SRAM cassettes do the missing tooth thing, but you'll get the effects of that which ever group you use it with.
2) I have a bike that's all SRAM otherwise, but I intentionally run a KMC chain instead because I like them better than the SRAM chains.
3) There's nothing at all relevant about the brand of your brakes if they work well.
OP: I think you should ride them both and decide based on which ergonomics you like better.
Just to be contrarian, imagine campy skeleton brakes with shimano shifters
