I sweat like a pig, this is my experience too. Same when I go XC skiing. For OP, GoreTex and similar layers do work for many people (those who sweat less). And in my case, the biggest difference between the expensive Goretex / Event etc stuff and the cheap knock-off breathable shells seems to be quality and durability. I haven't noticed any meaningful difference in breathability, in that regard they've all been equally bad in my use.
