A 1'' wide tire on a 700c wheel is somewhat similar in outside diameter to a 26" wheel with a 2'' tire
but the contact patch size is part of the handling characteristics on the bike.

But I read you are wanting to have the tire also 2'' wide on a 700s rim, a 29er bike..

Just go out and buy a 29er bike, the 2 are different , and start saving for a road bike too.

In the meantime , a pair of Schwalbe Big Apples , or the lower cost Tioga city slicker
will be better than Knobbys on the road.
