This is a high end bike, and warrants a proportionately diligent assembly. Your points are all valid, but it shouldn't be the OPs or any customer's job to tell a professional mechanic how to make a new bike perform well.

There are numerous causes of less than perfect shifting, including all those mentioned in thread and others, and if this were a $350.00 I'd be more forgiving, but at this level, mechanics have to step up and deliver a quality of assembly and adjustment that ensures that their customers get 100% of the performance they pay for.
The amount of mechanics who are capable of working on high end stuff, have the capacity to stay current and perform close to shop rate is like finding a needle in a haystack around here.
