631 does this as well (air hardening?). the difference between 631 and 853 is that 853 is heat treated, which increases the tensile strength somewhat. both fine steel. i love my 631 sputnik to death.
hurr hurr, I love my 631 Frame and I imagine that I would enjoy an 853 more. I can definitely tell the difference between the steel and aluminum ride. and I can definitely feel my 631 + carbon forks ride difference over my old chromo road bikes ride. So test it out, you may end up falling in love. If not look for some 854, its rare but its known for being epic. (Im trollin you
