LowCel, you should be able to recover an earlier backup. Try right clicking on the backup button and it should let you access the older files. I'd be more help but I'm posting from the iPhone and can't look at iTunes.
Thanks, apparently it doesn't save it every time it syncs. Oops. The last restore I had was from April 2010, it was better than nothing though.
