Brown-Inspired 3 speed help!

Hi everyone-
I don't post here much, so I wasn't sure what category to put this in (my apologies).

I've been in need of a new bike venture, so I've decided to turn a Trek road bike I have into one with an internal 3 speed rear hub, fenders, North Road-ish handlebars, etc. I got the idea from a Peugeot PX-10 Sheldon Brown had that he turned into a "PX-3". Call it blasphemous, call it silly; whatever, it's what I'm trying to do. The idea is to have a fairly lightweight and quick 3 speed.

Anyway, this is also going to be my first foray into wheel building. I want to find a 3 speed hub and lace it to a 27" rim (I'm trying to do this as cheaply as possible, too, because the wife already thinks I'm an idiot for having 4 bikes- so I'm trying to use as many old parts as I can). I've looked on eBay, and so far I'm watching an old Schwinn-approved Sturmey Archer with an axle width of 4.5". The fork spacing on my frame is 5". Would this be able to be spaced to fit?

Any and all suggestions/pointers as to how to go about this little project are much appreciate.
