We're the same weight and toured with 40 lbs. on Deep V 36H rims with no adjustments or problems at all. We run 28c Vittoria Rubino Pro Tech at 120 lbs. when loaded, Conti 4000 25c at 120 lbs. unloaded. We and bike did very well with that setup on pavement Though we were less happy on gravel when loaded, those rims and tires still worked fine for short stretches of a few miles.
