Knee surgery? What does your doc say? I'd worry more about a knee than completing a century.
The longest ride I did prior to my first century was 70 miles. A buddy of mine just began road cycling about 4-5 months ago. We rode 100+ miles in October. His longest ride prior to that was 50 miles. Granted, our pace was slower for his sake (15.6 avg mph for the whole ride). We stopped somewhat frequently.
You can do it, but mind that knee!
