In terms of functionality 105 will be fine, but if you're concerned about weight then see if you can get Ultegra for cheaper on e-Bay. There's certainly nothing wrong with putting 105 on a custom steel frame, it's your bike so put what you want on it. FWIW I run full Rival on my Orbea Orca and had no qualms about it.
