Bikes: 2 roadies, 7 fixed-gears, 1 hardtail, 1 full suspension mtb, and 1 hybrid...so far.

That's an issue with track ends. If you run a rear brake a change cog size the brake needs adjusting.
The best solution is if they would use the old style Campy dropouts which are real deep, but the angle
doesn't require brake adjustments.
