It's an unusual choice for a "fixie", but in your case I would recommend something like this:

Please note, this hub will NOT allow you to go fixed gear. But what's nice is that it's already spaced to 135mm, and you can buy single speed cogs cheaper than freewheels and easily swap them out (with a cassette lockring tool and chain whip.) Another bonus of running the Freehub is that it doesn't matter what your chainline is in front, you can put the cog where ever you want.

Velocity Deep V is always a good choice. I built up a wheel with a Kinlin rim and I'm pretty happy with it so far. Not as many color choices though:
