I built a pair of traditional wheels with Shimano 105 hubs(5600), Open Pro rims, 32 DT Swiss competition spokes (3-cross, with alloy nipples). Front wheel was 825g and rear was 1015g (without skewers) - very respectable IMO. I now have a pair of fancy wheels that are 400 grams lighter (Dura Ace 7850, 24mm rim), and keep the 105/OP wheels as my backup/bad weather wheels. The fancy wheels have needed zero truing in one year / 5000 km / 3000 miles.
