I ditched the panniers in the winter, having the weight up high on your back is obviously more stable(though harder to correct). Bunny hopping snowbanks is almost impossible with panniers. Also I find panniers lead to bloating... like a woman with a gigantic purse you're suddenly carting bull**** around you only use one a week.
Don't get me wrong, i own lots of panniers and use they a lot... but they aren't answer the best always.
And yes, backpack is way more aero, but dropping a roady with your 4 panniers makes for hilarity.
