The R540 will be a lot heavier due to the metals used, wear much faster, use a lighter spring for easier in/out (but worse for those with power), no spring adjustment, and is a thicker profile meaning that pedal strike would be easier with that pedal. Also the 105 metal plate can be replaced when it wears.
I have the 540's on my track bike. They are indeed comparatively rubbish on a track bike. I've clipped out twice in sprints, though I have yet to clip a pedal on Burnaby's 42 degree banking
