Chain manufacturers spend a lot of time and energy shaping/chamfering the plates so that the chains release and engage quickly and more smoothly.

They look at the types of materials used for the different component parts and how these parts are finished. This includes coatings and plating. This will affect durability and how noisy or quiet a chain can be to some extent.

KMC makes good chains including many Shimano chains.
