For the tires I vote the 4000s also. Been running them for thousands of miles and even through the nasty sand and gravel mess of the winter roads they have held up fine. At most I've had one flat in over 3000 miles on mine. I did notice a few gouged holes in the pair on my winter/rain bike but no flats. They roll so nice.
I bought the 4000s tires because I wanted black tires and could not find a black 4000.... I bought the ultegra because it is about the same price as a 105 locally and I was curious about if I'd gain any shifting performance. I've heard great reviews on the 6700 group.
Some go as far to to say it is Shimano's best group with the 7900 not being as good at the 7800 was
