I am riding three bars right now from the 1960's, one 1963 and two from 1967 and I have never hesitated to use them on double centuries etc. As long as they are not bent or damaged, I have never had a problem with bars breaking. Maybe someone else has? Grab an old set and try to brake them with your bare hands, I've never tried it but I doubt I could do it.
I think it's pretty rare for a set of Cinelli bars to break, but I have read about the 1R and XA stems breaking at the logo. Not sure how many miles it takes, or how much abuse, but I would hate to find out. That said, the old Cinelli bars and stems look like works of art, and it would be a shame to not be able to use them on this classic bike!
