I have done back to back centuries but I'm just now getting my touring bike loads dialed in.
Would be loaded, tent and bag riding. Days of travel will be determined by stop locations. I don't like the idea of limiting my daily travels but also don't like stopping without knowing a safe location.

How many back to back centuries have you done?

Your looking at 14 back to back centuries, 10+ hours in the saddle every day, which is optimistic given the hills along the route. Not very realistic, but I guess theoretically doable. Forget about stopping and enjoying anything along the way.

It really depends on what you want out of the tour. If your one of those guys that wants to suffer for a challenge, sure. If you want to enjoy the scenery, you are not going to have fun.
