Saute' in it a nice mirepoix with chanterelles and aromatic herbs and serve it as the second course. This calls for a heady Malbec.

seriously tho', I think I'd scrub it down real well with saddle soap a few times, maybe even a baking soda dry bath for a week ...and then Proofide it.
