I think its simply cause its not needed. For mountain biking its important since you have very high chances of going through mud and water and not to mention all of the dust that gets kicked up onto the bike and wheels. Flying down some single track after just going through some mud and trying to slow down on a sharp curve with traditional rim brakes would lead to a disaster.
