I love seeing this build and your Giant looks pretty nice too. After I get my little Peugeot all squared away I want to build up a dedicated touring bike from the parts of the damaged Trek 520 and a mountain bike frame. I am leaning toward the Peugeot I posted earier because of the long chain stays.
