For something completely different, we have not ruled out ducking across to Western Scotland and doing a week through the western islands. That would probably be a last minute call, depending on the weather.

When we tour, we tend to not book in advance, but have a plan A, B and C according to the weather, how we feel and what takes our fancy at the time.

We'll also have a couple of shorter domestic trips as "practice" for the above. What a great excuse to practice.
We did something similar in 2004, starting at Heathrow and cycling, training and ferrying across to France, then on to Belgium (Flanders) for a bit, then on to France by train. Attempted PBP, then went west to Nancy. The TGV trains are superb for fast, efficient and relatively cheap travel between major centres. As you are probably aware, you do have to pick your train services, though, as not all TGVs take bikes.
