Road steel with Carbon fork help

Hello,

I'm looking to build a road bike for use as a century rider, all day, occasional brevet bike. Hoping to build something sub 20 lbs so I can have fun climbing in the San Gabriel Mountains. I'm a big guy. 6'2", 210 lbs. I have a wheelset in the works. 32/32 Stans 340 tubeless, White Ind. hubs, db spokes.

Hoping to come in under 3k (or lower) for the remaining build.
Been looking at Torelli frameset with Torelli carbon fork and mix of Sram Rival/Apex parts.

Preferences: I can't afford titanium and not a big fan of carbon fiber.

Any steel frame and cf fork combos people have experience with.
