Anyway. Anyone have experience with Easton EA50's or the Shimano Wh R500 wheelset?
Machine built low spoke count wheels are a recipe for failure.
Get yourself the common suitable 32 hole rims of your choice (Velocity Aerohead OC rear & Aerohead front; DT RR465; and Mavic CXP33 are reliable moderate weight rims or something heavier like a Velocity Chukker, DT RR585, or Mavic A719 if you are a super Clydestale) hand-built laced cross-3 to Shimano 105 hubs (assuming 130mm rear spacing; at 135mm you can use mountain bike hubs) with 2.0/1.8mm spokes and brass nipples. You can probably get away with fewer spokes, but it's nicer to have wheels which you can ride home with an open brake release after bending a rim and loosing tension on a spoke than to call a taxi. Alloy nipples work fine too but cost more and you can twist or round them if some one didn't lubricate threads and sockets correctly or you don't seat a spoke wrench far enough during a road side repair.
People seem to like Kinlin rims and I was happy with how round and straight the XR-300 I built this weekend was although availability in the color of your choice can be spotty (silver XR-270 rims seem to have sold out in 28/32 hole drillings) which may be inconvenient if you want a replacement after wrecking a wheel instead of when the next shipment comes in from Taiwan.
They'll last until you crash them too hard or wear out the braking surfaces after xx,000 miles. When that happens you get a replacement rim with this year's decals, name, and inflation adjusted price, keep the hubs and spokes, and make the swap without re-lacing the wheel.
