If you piecemeal your new groupo off ebay, sell your ultegra, and learn to do the work yourself (its pretty easy) you'll probably only spend a few hundred bucks. campagnolo components are robust enough that you can get something a few years old and it will still perform like new. there are plenty of utube videos that will teach you to perform bicycle maintenance. there are only a handfull of speciality tools required that you could buy cheap (and have forever) or bring the bike to the shop just for that particular service.
campy also make wheels! last year I picked up a set of 06 zondas from ebay,1600gms, they rock. the best part is they were only $220 delivered. throw on a cassette for $50.

some people will advise against used parts but so long as the cash is coming from my pocket and not some multinational sponser they'll be good enough.
