Been packing and repacking the panniers trying to even out the load, or get 40 % over the front wheel and 60% over the rear. Then the stuff I'll need quick access to on the side of the bike I get off on, or close to the tops of the panniers, with stuff I might need later at the bottom. I know I am over thinking this. Help?

What is the best way to load the bike. Am I over working something that will work itself out once i get on the road? Over 4 panniers there's still room, been thinking of hauling dry goods, not a lot but something to eat when there's nothing around, that's weight that I'm sure will go down as I travel. A lot of this comes from my days backpacking and canoeing, taking food into the wilderness, bike touring isn't the wilderness, but I'm bringing a stove, why not?
