Not to be funny of negative are you sure you are up for a ride from vancouver to seattle having not ridden much or at all? Thats quite a ride for some one new to cycling!
If you do good luck and have fun and do get as much time in on your new bike as you can and make sure it fits as you can before the ride.
I know someone who bought the first one you have listed, when building it check everything including the spoke tension and true them go over the entire bike before you put it together and ride and its not to bad.
