Sounds good. Obviously, you have long legs, so perhaps an 80 inch gear could be OK, but I'd recommend making it something between 65 and 70 inches.
Also, I recommend attaching your luggage to the bike rather than to your back. Your back will thank you, and it will be easier to maneuver the bike.
