I used a bike-powered blender a few days ago at a local outdoor activities fair. I'm pretty sure you could make a small portable one.
I would have all the blender apperatus (blades and rotor) in the lid, fitting into a simple cup.
A flexible cable drive can be powered off the tyre or spokes.
You then need a cup mount and a way of fixing your apperatus over your cup.
