Depending on your budget you could go the custom or small production route [ Gunnar, Bruce Gordon, Rivendell, etc ] or you could do a bike from a larger company [ Trek, Cannondale, Surly, Jamis etc ].
You have a lot of options ... 9 spd or 10 spd ... cantilvers, linear pull or disc brake ... steel or aluminum ... drop, flat or trekking bar.
