I'm in the middle of an '87 ST400 overhaul and I noted the BB spindle length was 127mm. I may want to upgrade the drivetrain to something more modern in the future and I won't have the luxury of experimenting. Did you run into any issues when replacing/upgrading cranks on these old Cdales?

It all depends on the crankset used. Most of the modern sets specify what size BB to use.
