Most folders use flat bars, so few people build a folder using road groupsets.

The smaller diameter wheels are going to affect the gearing a little bit, make sure to include that in your calculations.

Offhand I don't see much reason to use Rival. I'd also think that if you really want a portable roadie, you might consider S&S couplers on a 700c bike or a Ritchey Breakaway.
