So, according to these sites, 35's are the narrowest I should run. I thought the tires on there now looked only marginally wider than the rims. Maybe I should scour ebay and Craigslist for a nice set of lighter, narrower wheels for use day to day and save these for loaded use. May make the bike a little more lively.
Sheldon's tire sizing is conservative and his chart is for inside width. I'd suspect that the width Salsa lists is for outside width. A 32 should still work and a 28 shouldn't have any problems although it might look a little odd.
