If you want a cheap FG/SS, its hard to beat the ones sold on line by Nashbar, Performance Bike, Bikesdirect, and so on. You would be hard pressed to convert a bike at the cost from these guys.
If you just want to see if you'd like it, just stop shifting and ride around in one gear for a while. Not the same for sure, but that would be free.
